
Gin Marinated Olives

Prep time: 10 minutes
Marinate time: 2–24 hours (the longer the better)
INGREDIENTS:
- 2 cups mixed olives (green, black, Kalamata, etc.)
- 2 tablespoons gin
- Zest of 1 orange
- 1 teaspoon crushed fennel seeds
- 2 garlic cloves, lightly smashed
- 1 sprig fresh rosemary
- 1/2 teaspoon chili flakes (optional)
- 1/4 cup olive oil
- Black pepper to taste
PREPARATION:
- In a bowl or jar, combine all ingredients and stir well to coat the olives.
- Transfer to a sealed jar or airtight container and refrigerate.
- Let marinate at least 2 hours, preferably overnight, for best flavor.
- Bring to room temperature before serving. Serve with cocktails, cheese boards, or crusty bread.
