Gin Marinated Olives

Prep time: 10 minutes
Marinate time: 2–24 hours (the longer the better)

INGREDIENTS:

  • 2 cups mixed olives (green, black, Kalamata, etc.)
  • 2 tablespoons gin
  • Zest of 1 orange
  • 1 teaspoon crushed fennel seeds
  • 2 garlic cloves, lightly smashed
  • 1 sprig fresh rosemary
  • 1/2 teaspoon chili flakes (optional)
  • 1/4 cup olive oil
  • Black pepper to taste

PREPARATION:

  1. In a bowl or jar, combine all ingredients and stir well to coat the olives.
  2. Transfer to a sealed jar or airtight container and refrigerate.
  3. Let marinate at least 2 hours, preferably overnight, for best flavor.
  4. Bring to room temperature before serving. Serve with cocktails, cheese boards, or crusty bread.
