Harissa Spaghetti

INGREDIENTS:

  • 12 oz spaghetti
  • 2 tablespoons olive oil
  • 3 tablespoons harissa paste
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving (optional)

PREPARATION:

  1. Cook spaghetti according to package instructions until al dente. Drain and reserve some pasta water.
  2. Heat olive oil in a large pan over medium heat. Add garlic and cook until fragrant, about 1 minute.
  3. Stir in harissa paste and cook for another minute.
  4. Add cherry tomatoes and cook until softened, about 3-5 minutes.
  5. Toss in the cooked spaghetti, adding reserved pasta water as needed to loosen the sauce.
  6. Season with salt and pepper, stir in parsley.
  7. Serve topped with Parmesan if desired.
