
Harissa Spaghetti

INGREDIENTS:
- 12 oz spaghetti
- 2 tablespoons olive oil
- 3 tablespoons harissa paste
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- Grated Parmesan cheese, for serving (optional)
PREPARATION:
- Cook spaghetti according to package instructions until al dente. Drain and reserve some pasta water.
- Heat olive oil in a large pan over medium heat. Add garlic and cook until fragrant, about 1 minute.
- Stir in harissa paste and cook for another minute.
- Add cherry tomatoes and cook until softened, about 3-5 minutes.
- Toss in the cooked spaghetti, adding reserved pasta water as needed to loosen the sauce.
- Season with salt and pepper, stir in parsley.
- Serve topped with Parmesan if desired.
