
Zucchini Butter

INGREDIENTS:
- 2 medium zucchini, grated (about 2 cups)
- 2 tablespoons olive oil or unsalted butter
- 2 cloves garlic, finely minced
- Salt and black pepper to taste
- Optional: a squeeze of lemon juice or a pinch of chili flakes
PREPARATION:
- Grate the zucchini using a box grater or food processor. No need to peel it.
- Heat the olive oil or butter in a pan over medium heat. Add the garlic and cook until fragrant, about 30 seconds.
- Add the grated zucchini, a pinch of salt, and stir.
- Cook, stirring frequently, for 15–20 minutes until the zucchini breaks down and becomes soft and spreadable. If it looks watery at first, don’t worry — it will cook down.
- Finish with black pepper and any optional extras like lemon or chili.
- Serve warm on toast, folded into eggs, or as a sandwich spread. Keeps in the fridge for 3–4 days.
