
Homemade Chili Crisp

INGREDIENTS:
- Red chili flakes (e.g. Urfa biber, gochugaru, or smoked chili flakes)
- 100% pure chili powder (not a spice blend)
- Fried shallots (store-bought or homemade)
- 3–4 garlic cloves, finely chopped
- Fresh orange zest
- 1 tablespoon of finely chopped ginger
- 3 tablespoons of olive oil (or neutral oil)
- 1 tablespoon of dried mushroom powder (porcini, shiitake, etc.)
- 1/4 cup chopped dates
- Nuts and seeds (pistachios, almonds, pepitas, etc.)
- Salt to taste
PREPARATION:
- Mix chili flakes, chili powder, mushroom powder, zest, and salt in a small bowl and set aside.
- In a pan, heat the oil over medium. Add garlic and ginger. Cook until garlic starts to toast.
- Add nuts and seeds. Cook a few more minutes until golden and crisp.
- Turn off heat. Add fried shallots, chopped dates, and spice mix. Stir well — the heat will toast the spices.
- Once slightly cooled, transfer to a glass jar and store in the fridge.
