
Peanut Butter Granola

INGREDIENTS:
- 3 cups rolled oats
- 1/2 cup natural peanut butter
- 1/3 cup maple syrup or honey
- 2 tablespoons coconut oil (or neutral oil)
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon (optional)
- Pinch of salt
- 1/2 cup chopped nuts or seeds (optional)
- 1/2 cup dried fruit or chocolate chips (add after baking)
PREPARATION:
- Preheat your oven to 325°F (160°C). Line a baking tray with parchment paper.
- In a saucepan, gently warm the peanut butter, maple syrup, coconut oil, vanilla, cinnamon, and salt until smooth.
- Pour over the oats (and nuts/seeds if using). Mix well to coat evenly.
- Spread the mixture evenly on the baking tray. Press it down slightly with a spatula.
- Bake for 25–30 minutes, stirring halfway for loose granola, or leave it untouched for chunky granola.
- Let cool completely. Add dried fruit or chocolate chips if using.
- Store in an airtight jar for up to 2 weeks.
