Peanut Butter Granola

INGREDIENTS:

  • 3 cups rolled oats
  • 1/2 cup natural peanut butter
  • 1/3 cup maple syrup or honey
  • 2 tablespoons coconut oil (or neutral oil)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)
  • Pinch of salt
  • 1/2 cup chopped nuts or seeds (optional)
  • 1/2 cup dried fruit or chocolate chips (add after baking)

PREPARATION:

  1. Preheat your oven to 325°F (160°C). Line a baking tray with parchment paper.
  2. In a saucepan, gently warm the peanut butter, maple syrup, coconut oil, vanilla, cinnamon, and salt until smooth.
  3. Pour over the oats (and nuts/seeds if using). Mix well to coat evenly.
  4. Spread the mixture evenly on the baking tray. Press it down slightly with a spatula.
  5. Bake for 25–30 minutes, stirring halfway for loose granola, or leave it untouched for chunky granola.
  6. Let cool completely. Add dried fruit or chocolate chips if using.
  7. Store in an airtight jar for up to 2 weeks.
