Roasted Cherry Tomatoes

INGREDIENTS:

  • 2 cups cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper to taste
  • Optional: fresh basil or thyme for garnish

PREPARATION:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the cherry tomatoes with olive oil, garlic, salt, and pepper.
  3. Spread the tomatoes cut-side up on a baking sheet lined with parchment paper.
  4. Roast for about 20–25 minutes until the tomatoes are soft and slightly caramelized.
  5. Remove from the oven and garnish with fresh herbs if desired.
  6. Serve warm as a side dish, on toast, or as a salad topping.
