
Roasted Cherry Tomatoes

INGREDIENTS:
- 2 cups cherry tomatoes, halved
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and freshly ground black pepper to taste
- Optional: fresh basil or thyme for garnish
PREPARATION:
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the cherry tomatoes with olive oil, garlic, salt, and pepper.
- Spread the tomatoes cut-side up on a baking sheet lined with parchment paper.
- Roast for about 20–25 minutes until the tomatoes are soft and slightly caramelized.
- Remove from the oven and garnish with fresh herbs if desired.
- Serve warm as a side dish, on toast, or as a salad topping.
