Rosemary Olive Oil Cake

INGREDIENTS:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup olive oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 tablespoon fresh rosemary, chopped
  • 1/2 cup chocolate chunks (mix of big and small pieces)

PREPARATION:

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, beat olive oil, sugar, and eggs until well combined.
  4. Add buttermilk and chopped rosemary, and mix well.
  5. Gradually fold the dry ingredients into the wet mixture.
  6. Gently fold in the chocolate chunks.
  7. Pour the batter into the prepared pan and bake for 35-40 minutes or until a toothpick comes out clean.
  8. Let cool before removing from the pan and serving.
