
Rosemary Olive Oil Cake

INGREDIENTS:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup olive oil
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup buttermilk
- 1 tablespoon fresh rosemary, chopped
- 1/2 cup chocolate chunks (mix of big and small pieces)
PREPARATION:
- Preheat the oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, beat olive oil, sugar, and eggs until well combined.
- Add buttermilk and chopped rosemary, and mix well.
- Gradually fold the dry ingredients into the wet mixture.
- Gently fold in the chocolate chunks.
- Pour the batter into the prepared pan and bake for 35-40 minutes or until a toothpick comes out clean.
- Let cool before removing from the pan and serving.
